Ingredients

  • 1 cup (90 grams) oat flour
  • 1 tablespoon (14 grams) baking powder
  • 1/2 cup (85 grams) brown sugar
  • 2 cups (160 grams) quick oats
  • 1 cup (160 grams) pitted prune plums, chopped small (reserved 1/4 cup for topping)
  • 2 large eggs
  • 3/4 cup (180 grams) non-dairy milk (recipe – almond milk)
  • 1/3 cup (65 grams) seed or vegetable oil
  • 1 teaspoon (3 grams) vanilla extract

Directions

  1. Preheat oven to 375F (190C). Grease a 12-cup muffin pan or line with 12 muffin paper liners.
  2. In a large bowl, sift together the oat flour and baking powder. Stir in the sugar, oats, and plums. Create a well in centre and set aside.
  3. In a medium bowl, lightly beat the eggs, then beat the milk, oil, and vanilla. Pour the liquid in the well of the dry ingredients. Stir gently until just combined; do not over mix.
  4. Use an ice-cream scoop or spoon the batter in the muffin pan. Bake for 20 minutes, until well risen, golden brown and firm to the touch.
  5. Remove from oven and let muffins cool in pan for 5 minutes, then transfer to wire rack to finish cooling. Serve and enjoy!
