Ingredients
- 1 cup (90 grams) oat flour
- 1 tablespoon (14 grams) baking powder
- 1/2 cup (85 grams) brown sugar
- 2 cups (160 grams) quick oats
- 1 cup (160 grams) pitted prune plums, chopped small (reserved 1/4 cup for topping)
- 2 large eggs
- 3/4 cup (180 grams) non-dairy milk (recipe – almond milk)
- 1/3 cup (65 grams) seed or vegetable oil
- 1 teaspoon (3 grams) vanilla extract

Directions
- Preheat oven to 375F (190C). Grease a 12-cup muffin pan or line with 12 muffin paper liners.
- In a large bowl, sift together the oat flour and baking powder. Stir in the sugar, oats, and plums. Create a well in centre and set aside.
- In a medium bowl, lightly beat the eggs, then beat the milk, oil, and vanilla. Pour the liquid in the well of the dry ingredients. Stir gently until just combined; do not over mix.
- Use an ice-cream scoop or spoon the batter in the muffin pan. Bake for 20 minutes, until well risen, golden brown and firm to the touch.
- Remove from oven and let muffins cool in pan for 5 minutes, then transfer to wire rack to finish cooling. Serve and enjoy!
