Cashew Almond Cookies

Makes: 16 cookies Time: 12 - 15 minutes


1-½ cup (200 grams)  cashews, finely grounded

1 cup (105 grams) almond flour

⅓ cup (65 grams) erythritol (Zuga)

⅛ teaspoon salt (optional)

⅓ cup (70 grams) Healthy Crunch seed butter

1 large egg, plus 1 large egg yolk


Preheat the oven at 350F (180C). Grease or line the cookie sheet with parchment paper.

In a large mixing bowl, add the grounded cashews, almond flour, natural sweetener, and seed butter. Beat with an electric mixer until combined.

Drop by tablespoonfuls or use a cookie scoop and place 2 inch apart on the prepared baking sheet. Bake for 12 - 15 minutes, or until lightly golden brown around the edges. Remove from the oven and let cool for 5 minutes before transferring to the wire rack. Serve and enjoy!
