Chocolate Brownie Cookies Made with Cassava Flour

2/3 cup (135 grams) Wholesome™ organic golden sugar

2 large eggs

1/2 cup  (110 grams)  Healthy Crunch™ chocolate seed butter

1 cup (140 grams) Bob’s Red Mill™ cassava flour

1/4 cup (25 grams) unsweetened cacao powder

1 teaspoon Bob’s Red Mill™ baking powder

1/4 teaspoon salt

1/2 cup (90 grams) Enjoy Life™ semi-sweet mini chocolate chips

1/3 cup (35 grams) walnuts, finely chopped


Preheat the oven at 350F (180C). Lightly grease a cookie baking pan or line with parchment paper.

In a large bowl, add the eggs and sugar, beat with an electric mixer on high for about 1 minute. Add the seed butter and beat until combined, about 1 minute.

In a medium bowl, whisk the cassava flour, cacao powder. baking powder, and salt. Fold into the seed butter mixture until combined. Fold in chocolate chips and walnuts.

Using an ice cream scoop or a spoon, place dough on a baking pan about 1 inch apart. Bake for 10 - 12 minutes, Remove from the oven, cool in the pan for 5 minutes, then transfer to a wire rack for further cooling. Serve and enjoy!
