INGREDIENTS
1/2 cup (100 grams) organic golden sugar
2/3 cup (130 grams) vegan butter or margarine, chilled
1 large egg yolk
3/4 cup (110 grams) cassava flour
1 teaspoon (2 grams) Matcha green tea powder
1/8 teaspoon salt
INSTRUCTIONS
Preheat the oven at 350F (180C). Lightly grease a cookie baking pan or line with parchment paper.
In a large bowl, add the sugar and butter, beat with an electric mixer on high for about 1 minute. Add the egg yolk and beat until combined, about 1 minute.
Add the cassava flour, match powder and salt. Beat mixture until combined. Best to roll between 2 pieces of parchment paper about a 1/4-inch thickness, use desired cookie cutters. Gather leftover dough and repeat. Note: Recommended to refrigerate dough for 20 minutes before cutting out shape.
Place dough on a baking pan about 1 inch apart. Bake for 10 - 12 minutes, Remove from the oven, cool in the pan for 5 minutes, then transfer to a wire rack for further cooling. Serve and enjoy!
