Pear Oat Flour Cookies

3/4 cup (170 grams) Wholesome™ organic golden sugar

2 large eggs

3/4 cup  (110 grams)  Healthy Crunch™ super seed butter

2 teaspoon (10 grams) vanilla extract

1-1/2 cup (160 grams) Only Oats™ oat flour

1 teaspoon baking soda

1/4 teaspoon salt

1/2 cup (110 grams) pear, can or fresh, finely chopped


Preheat the oven at 375F (190C). Lightly grease a cookie baking pan or line with parchment paper.

In a large bowl, add the eggs and sugar, beat with an electric mixer on high for about 1 minute. Add the seed butter and vanilla, beat until combined, about 1 minute.

In a medium bowl, whisk the oat flour, baking soda, and salt. Fold into the seed butter mixture until combined. Fold in the pears until combined.

Using a regular cookie scoop or a spoon, place dough on a baking pan about 1 inch apart. Bake for 10 - 12 minutes, Remove from the oven, cool in the pan for 5 minutes, then transfer to a wire rack for further cooling. Serve and enjoy!
