Superhero Trail Mix Muffins

2-1/2 cups (260 grams) almond flour

1-1/2 cup (160 grams) Healthy Crunch Superhero Trail Mix

2 teaspoons (10 grams) baking powder

1/2 teaspoon (2 grams) baking soda

1/4 cup (70 grams) seed butter (heathy crunch)

1/4 cup (65 grams) diary-free yogurt

1 cup (240 grams) dairy-free milk



Preheat oven at 375F (190C). Line a muffin tin with 12 liners, or grease 12 of the molds; set aside.

In a medium-sized mixing bowl whisk together the almond flour, trail mix, baking powder, and baking soda. set aside.

In a large bowl beat seed butter and the yogurt. Then whisk the milk. Add the wet ingredients to the almond flour mixture, stirring just until combined.

Using a greased 1/3 cup measuring tool, scoop batter into prepared muffin molds. Each tin should be about 3/4 full. Add some extra trail mix on to if desired

Place pan in oven and bake for 18-20 minutes. Remove from oven and let muffins cool 5 minutes in the pan before transferring to a wire wrack to cool completely.
